Black Bean Taco Salad is one of my family’s favorite meals. It’s also one of my favorite meals to prepare when I need something fast for a hungry household. I almost always have all or most of the ingredients on-hand. One of the other things I like about a this salad is that it’s so versatile. Family members can add an ingredient or two or leave out one or two and everyone is still happy with the meal. Since this vegetarian taco salad is a light meal is easier on the digestive system for those times you need something quick and easy for those late night meals.
So, the next time you’ve had a long day and have a house full of hungry people, try whipping up a black bean taco salad. You will kick-start your evening with a happy, smiling, satisfied crew.

Cooked Rice (Spanish Rice is my favorite)
- Heat your black beans and sprinkle the top of the beans with your choice of taco seasoning.
- There is no secret special way to put this together. Just layer all your ingredients together any way you like. 🙂
